For this weeks edition of the Lunch Break Interview Series, I had the pleasure of speaking with Elizabeth Kellett.


I came across Elizabeth’s instagram page a while back and have been so intrigued by all of her posts! Among pictures of her family, she shares drool-worthy creations from her kitchen. I am constantly in awe of her dishes!

Elizabeth is married to Derek Kellett and is a mother of two. Isla who is 4 and Remy who is 1. She loves Jesus, fitness, cooking, and baking.


Elizabeth makes cookies on a DAILY BASIS (um, YUMM!) and loves to try new recipes.

 What inspired you to start baking and cooking? 

I come from a long line of cooks and bakers. My grandma, Mom, aunts and cousins love to cook. Watching and helping my mom in the kitchen when I was young was always something I really enjoyed and have great memories doing. We get together almost every Sunday for what we call ‘Sunday dinner’ (lunch) after church. About 30-40 of us get together at my grandparents house and enjoy a meal. I usually bring a dessert! Also I absolutely love to make meals for new Moms. I feel like God has truly given me this talent to share the gift of a good cooked meal, dessert (and Lactation cookies) to new mommas! It brings me great joy!

 How do you bake and cook with two little ones? Do your children like to help you in the kitchen? 

Nap time is key for my 1 year old little guy, Remy. He still takes 2 pretty good naps a day. My 4 year old, Isla, enjoys helping me in the kitchen or sits and makes pretend playdoh food or plays with a big container of mini legos or art supplies while I cook or bake. She definitely has an interest in cooking and baking so far and asks a lot of questions. It’s fun to see her excited about cooking and baking (and of course the eating- girl after my own heart!)

 Do your dishes affect your fitness? Are you able to separate the two to remain healthy and have balanced nutrition? 

Fitness and working out regularly is a big part in how and why I can enjoy all kinds of food. While I love to cook and eat healthy I also love balance and making baked goods as well as eating them. It is all about moderation though. I enjoy one cookie or a scoop of ice cream or small slice of pie. I try not to overdo it and enjoy passing baked goods along to others (family, neighbors and friends).

Do you create your own recipes or do you follow certain ones? 

I follow many recipes and tweak most:) I love creating my own recipes when I have time. I created the omelette panini when I competed against other mom’s who cook on ABC’s The Chew. That recipe was put in their most recent cookbook which was a big accomplishment for me! I was running a food blog for awhile but decided to take a break for a little while. Would love to get back into it again and really be able to put my heart into it!

I would love to follow a food blog from you! What made you decide to take a break? 

That’s so sweet, thanks so much! For now I’m just really trying to kind of pause time and just enjoy my kids while they’re little. Though I love food blogging it is time consuming but I hope to get back into the swing of things once they’re in school (no rush on that!! Haha.)

What was it like to compete against other mom’s on The Chew?

It was a dream come true! So fun to get to know the other two sweet mommas and to meet all the hosts of the show! I made an omelette panini which is the recipe they used in the cookbook!

Did your faith help you to pursue this opportunity? Did your experience encourage or discourage you?

I feel like the Lord has truly blessed me with a love for cooking and baking and felt God’s hand in that opportunity. Even though my recipe didn’t win the contest I left feeling encouraged and so very grateful for the awesome experience.

Zyia activewear sounds intriguing! Would you say that a certain amount of braveness or boldness is necessary to wear and sell workout apparel?

Yes for sure- exercise is something I do for myself- it helps me both physically and emotionally and just puts me in a good, positive mind set for my day. Plus I feel so energized after exercise and with two little ones on the go I find workout clothing is the easiest thing to wear throughout the day during this time of life- and the fact that I love Zyia’s clothing helps!! It’s a risk to take but I figure it’s something fun to earn a little extra money and just see where it goes!

I’m thankful I was able to speak with Elizabeth this month! I admire the servant heart that Elizabeth has shown by creating meals for new mother’s. This isn’t something that you see very often in today’s world and it’s such a respectable thing.
